It's one of my most favourite dish and am very happy to share this recipe with you all:)
Ingredients
Rice flour- 1 cup
Sour butter milk- 2 cups
Salt to taste
Hing- 1/4th tsp
Sesame oil- 4-5 tbsps
Mustard- 1 tsp
Split urad dal ( ullundhu) - 1 tsp
Chana dal ( chick peas/ Kadalai paruppu)- 1 tsp
More molagai ( preserved red chillies)- 10-12
Curry leaves - few
Method
In a big bowl, add rice flour, salt , hing and butter milk and mix well to get a smooth batter. There should be no lumps at all.
Add little water, mix well and bring it to pouring consistency ( should be like dosa batter).
Grease a plate with sesame oil and keep it ready.
Heat oil in a heavy bottom pan. Add mustard. When it starts spluttering add split urad dal, chana dal, more molagai and curry leaves. Sauté for few seconds.
Reduce the flame and add the rice flour mixture and keep stirring simultaneously.
Stir and cook till the mass becomes non sticky and start leaving the pan.
Transfer it the greased plate and spread it uniformly and smoothen the top. Allow it to set for sometime.
Cut into squares or any desired shape and serve :)
